Home-made pernil

Dan and I finally got our pernil to be the way my dad (and Puerto Ricans) make it.  This was due to the fact that we got a huge piece with skin, vs. last time when it was bone and skinless.  Don't know what we were thinking before.  It was sooo good but unhealthy haha.  Lasted what felt like a million meals.
