We got some pork tenderloin, so decided to do an homage to the in-laws and do a balsamic roasted pork tenderloin. Also of course accompanied by latkes and apple sauce. Made the meal twice - once with frozen latkes (thanks TJs) and the second time, home-made. I think the TJs ones were better honestly LOL and the home-made took sooo much effort. I'm glad I tried though so I can appreciate how much work goes into it.

These larger latkes were home-made. Very tasty but a lot of work shredding and squeezing out water and then making the patties and frying
