Normally I make ube cake, but decided on cupcakes and found some fun, pre-made purple frosting at the store. Sorry not sorry that I didn't make it from scratch. It was excellent though the colors perhaps a little aggro lol.

On separate note, I also made ube pancakes. That Ube Extract is everything! Really livens up any baked goods or foods.
These were acutally from the Trader Joe's Ube Mochi pancake mix. Super fun and a nice mochi texture. Hard to find so I'm happy to make my own pancakes w/the ube extract, but def great for other people to enjoy ube.
